La Chaume des Lies
Lothar Galloo and Margaux Rivaux, a couple who first crossed paths while working for Pierre Fenals at Maison En Belles Lies in 2018, made the decision to begin their own winemaking journey in the revered land of Burgundy. Driven by their shared dream, they set out to establish their very own winery.
After an extensive search, their quest led them to settle in the picturesque commune of Baubigny, nestled just south of Saint-Romain. Here, they were fortunate to secure a spacious underground cellar at an affordable price, providing them with the ideal setting for their aspirations.
Their venture began by renting 2.5 hectares of parcels across Saint-Aubin, Auxey-Duresses, Bouzeron, Hautes-Côtes de Beaune, and 2 hectares in Beaujolais. Margaux, having gained valuable experience working alongside Pierre in biodynamic practices since 2016, and Lothar, enriched by his previous experiences with Bruno Schueller in Alsace and Didier Barral in the Languedoc, not to mention his upbringing in an organic vegetable-growing family, possessed the knowledge and commitment to cultivate their vineyards without the use of herbicides, pesticides, or synthetic chemicals. Every operation was meticulously carried out in accordance with the lunar calendar.
Within the cellar, Lothar and Margaux sought to minimize intervention, allowing the vintage and unique terroir of each plot to eloquently express themselves. Their approach was characterized by precision, harmony, and a commitment to authenticity. All their wines are unfined and unfiltered, with only a minimal amount of sulphites added just prior to bottling.
The results of their endeavour have been nothing short of remarkable for a young winery. Much like the couple themselves, Margaux exudes vibrant energy, while Lothar maintains a calm and contemplative demeanour. This dynamic chemistry is beautifully reflected in their wines, which captivate the senses with their exceptional craftsmanship and distinctive character.
