Ami
AMI (French), in English, means friend. The winery is a collaboration between Paul Perarnau and Willy Roulendes, two friends with great chemistry back when they both worked at Clos du Moulin aux Moines in Auxey-Durresses. Paul later decided to move to Provence to work at Domaine Hauvette, while Willy wanted to stay at Clos du Moulin aux Moines, where he is now the head winemaker. However, they soon realized that something important was missing in their lives. Therefore, they decided to join forces to be able to work together again and keep their friendship alive. AMI was born, and its first vintage was released in 2014.
Paul is the farmer, a great blind taster, a man with immense energy and vitality. He has a unique perspective on the regions and terroirs of Burgundy and a deep understanding of their vines. His passion for wines of character led him to work with talented winemakers such as Dominique Hauvette and our beloved Oronce de Beler.
Willy is the winemaker, a man with a great sense of humor. After working at Domaine De Montille, he took care of wines from Clos du Moulin aux Moines in Auxey-Durresses. With these valuable experiences, he gained a deep knowledge of the terroirs of the Côte de Beaune. For him, Ami is the opportunity to release a burst of madness.
They only craft wines using healthy organic or biodynamic grapes and work naturally in the cellar. The wines reflect the personalities of Paul and Willy — energetic yet welcoming, affordable but substantial, and absolutely delicious Burgundies that we love.
The wines see no new oak, no additives, natural yeast, are unfined and unfiltered, have no sulfite added during fermentation, and only minimal is added before bottling. The reds always undergo whole bunch fermentation, and there is no batonnage (lees stirring) for the whites.
